THE JOB: As a Sous Chef at The Chandler Steakhouse, you will be responsible for setting the stage for an excellent guest experience by providing direction and leadership to our kitchen staff that is consistent with the MGM brand. You will play a vital role in our mission to own the guest's experience and create WOW memories at one of our fine dining restaurants that they will carry with them far beyond their stay with us. THE DAY-TO-DAY:
- Assist the Executive Chef in planning and directing all steakhouse kitchen operations.
- Prepare and administer kitchen schedule, payroll, training, issuing discipline, and coaching.
- Ensure the preparation and presentation of high-quality dishes that meet our exceptional standards.
- Supervise and inspire kitchen staff (master cooks, cooks, pantry workers and helpers) fostering a collaborative and motivated work environment.
- Maintain compliance with food safety and sanitation regulations.
- Contribute to menu development, including specials and seasonal offerings.
- Oversee inventory management, labeling, ordering, and cost controls.
- Train and mentor culinary team members to ensure consistent execution of recipes and techniques.
THE IDEAL CANDIDATE:
- At least 2 years of experience in a high-volume production or fine dining restaurant within a culinary role.
- Prior supervisory experience within a fine dining restaurant or equivalent environment as a sous chef or similar leadership role.
- Prior experience working within a casino, hotel or resort setting.
- Strong knowledge of steakhouse cuisine and cooking techniques.
- Food & Beverage and/or culinary degree or certification from an accredited Culinary Institute.
- Ability to work evenings, weekends, and holidays as needed.
- Proficient using Microsoft Office programs such as Word, Excel, Outlook, etc. and basic office equipment.
- High school diploma, GED or equivalent.
