THE JOB:

As an Assistant Chef at MGM Grand, you will be responsible for ensuring food quality is superior. You will also set the stage for guest experience with your welcoming smile and service. By understanding their unique stories and needs, you will own their experience to create WOW memories they will carry with them far and beyond their stay with us.

THE DAY-TO-DAY:

  • Manage and train Master Cooks, Cooks, Pantry Workers, and Helpers on job responsibilities

  • Assist in the main kitchen which supports the butcher shop, employee dining hall, room service, and aviation.

  • Ensure food quality is superior and take action to correct any irregularities

  • Maintain knowledge, understanding, and preparation of base sauces, stocks, and soups

  • Communicate with management and service staff to fulfill and address any issues or needs requested by guests and employees

  • Assist the Executive Chef by controlling purchasing, receiving, purveyor lists, and inventory of all kitchen items

  • Prepare and administer kitchen schedule

  • Assist the Executive Chef by establishing goals and objectives that focus on profit, product, and people

THE IDEAL CANDIDATE:

  • Schedule: Work varied shifts including graveyard shifts, weekends and holidays

  • Experience: Proven expertise in a high-volume kitchen, preferably in fine dining

  • Management: 2 years prior experience in supervising employees

  • Customer Service Skills: Strong customer service background, with the ability to create personalized experiences and address guest needs promptly and professionally.

  • Resort/Casino Experience: Familiarity with the dynamics of working in a resort or casino environment, adept at managing high-energy guest interactions.
